Watermelon mint lemonade
This lemonade has 'summer' written all over it. Honey and mint infused 'simple syrup' mixed with watermelon and of course lemons. So refreshing!

Simple syrup
- 1 cup water
- 1-3 tbsp honey (or maple syrup or agave syrup if vegan)
- 1 bunch fresh mint (or peppermint)
Watermelon mint lemonade
- 4 cups watermelon (in cubes, no seeds)
- 4 lemons (peeled and seeded)(or sub limes (5 instead of 4))
- 1 cup 'simple syrup'
- 1 cup water
- 1 cup ice cubes
To make the 'simple syrup', heat up water and add 1 tbsp of honey (or use maple or agave syrup if you'd like a more neutral flavor; honey influences the flavor of the lemonade more) and mint sprigs. Give it a quick stir and taste to adjust the sweetness. Let it cool completely and then strain it.
Add cubed watermelon, peeled and seeded lemons (or limes), ice, water and 'simple syrup' to a blender and blend until smooth. Strain or don't strain, that is up to you (don't strain if you want to keep the good stuff in there).
Add ice to a glass and pour the lemonade on top of it.
Decorate the glass with a few sprigs of mint, a lemon and/or watermelon wedge (optional).
