Homemade creamy yogurt and mango mousse parfait

Homemade cottage cheese and mango mousse parfait is the perfect weekday dessert. DELICIOUS, WHOLESOME, NUTRITIOUS AND SO EASY TO MAKE!

Equipment

  • Blender/sumergible blender/foodprocessor
  • 4 small glass jars

Ingredients
  

  • 3 lbs yogurt (yogurt of choice)
  • 2 large ripe mango (cubed)
  • 2 cans coconut milk (the creamy part at the top of a can of refrigerated coconut milk)
  • 1 lime (juiced, optional)
  • 1 cup granola (of choice)
  • 4 tbsp puffed quinoa (or homemade** cocoa puffs)

Instructions
 

Strain the yogurt

  • To strain the yogurt, take out a colander, a tea towel or large piece of cheese cloth and a bowl. Place the colander on top of the bowl and place the tea towel in the colander. Pour the yogurt in the tea towel. To prevent spilling, tie the towel together (like a pony tail).

Make the mango mousse

  • Add mango cubes and coconut cream (the top part of a can of refrigerated coconut milk; scoop off the thick creamy part) to a blender. After blending it into a smooth and creamy consistency taste it. If it lacks flavor, add a splash of lime juice.

Assemble the parfaits

  • Scoop granola in the glass jar. This will be your bottom layer. Now add altered layers of creamy yogurt and mango mousse. Sprinkle puffed quinoa or homemade cocoa puffs on top to finish it off.

Notes

* homemade cream cheese; same method just leave it to strain longer (overnight) than mix in a pinch of salt and optionally some lemon zest and dried oregano. Roll the 'yogurt cheese' into little balls. To store them, add olive oil to a small jar and add the cheese balls. Refrigerate.
1 lb yogurt of choice
½ tsp of fine grain sea salt
1 tsp lemon zest (optional)
½ tsp dried oregano (optional)
1-2 cups of olive oil
1 small jar just big enough to fit all of the yogurt balls
