Green goddess overnight oats / Popeye overnight oats

Whatever you want to call this breakfast bowl, it is a great addition to your breakfast repetoire and a very healthy one as well. Kids approved!

Equipment

  • blender or food processor

Ingredients
  

  • 500 ml coconut milk (or other type of (dairy free) milk)
  • 1 cup mango (cubed)
  • ½ zucchini (cubed)
  • 100 gr baby spinach leaves (more or less a handful)(or sub kale)
  • 1 tbsp spirulina (optional)
  • 150 gr rolled oats
  • 50 gr pumpkin seeds (optional)

Toppings (all optional)

  • 1 cup mango (cubed)
  • ½ cup (homemade*) granola
  • 1 cup blueberries (fresh or frozen)
  • ½ cup nuts (toasted)(like pecans, almonds or walnuts)

Instructions
 

  • Add all but the oats and pumpkin seeds to a blender bowl and puree.
  • Add the puree to a mixing bowl. Add the oats and pumpkin seeds to it and mix with a wooden spoon.
  • Refrigerate overnight or at least for 4 hours.
  • Divide the overnight oats over 4 bowls and garnish with toppings.
