Fruity popsicles

Homemade ice lollies naturally sweetened with fruit. Mango, coconut and pitaya are the stars of this show!

Ingredients
  

Mango layer:

  • 1 cup ripe mango (cubed, frozen). You can use fresh mango as well, freezing time will be more though
  • 1-2 tbsp lime juice (to taste)

Coconut layer:

  • 1 cup coconut milk
  • 2-3 tbsp lime juice (to taste)
  • 1-2 tbsp coconut cream (add for sweetness to taste)

Pitaya layer:

  • ¾ cup pitaya (cubes, frozen)
  • ¼ cup pineapple (cubed)
  • 2-3 tbsp lime juice
  • 1-2 tbsp liquid sweetener (optional)(like agave syrup or honey if not vegan)

Instructions
 

  • Blend all mango layer ingredients in a blender. And pour/scoop into a popsicle mold, filling it up ⅓. Freeze for 1 hour (if using frozen mango) or up to 2 hours for fresh mango.
  • Mix/blend all coconut ingredients in a blender. And pour op top of the mango layer. Filling it up another ⅓ of the mold. Now there is ⅓ left to be filled.
  • Blend all pitaya ingredients in a blender. And pour/scoop into a popsicle mold, filling the mold completely (just below the rim). Freeze for 1 hour (if using frozen pitaya) or up to 2 hours for fresh pitaya. Freeze your 3 layered popsicles for 3-4 hours.
