Equipment

  • small (ceramic) oven dish (ideally 10'x6' / 25x15cm)
  • Whisk

Ingredients

  • 8 slices (whole wheat) bread (or other type of bread)
  • 2 medium size green apples (sliced, peel not removed)
  • 4 medium size eggs
  • 185 ml milk (of choice. I used oat milk)(approx ¾ cup)
  • 3-4 tsp cinnamon (divided, plus extra to taste)
  • 2 tbsp maple syrup
  • 1-2 tbsp coconut oil (or (vegan) butter) for greasing)
  • 1 tsp sea salt
  • 1 tsp pure vanilla extract
  • 2 tbsp sliced almonds (optional for topping)
  • 2 tsp coconut sugar (optional for topping)(or other type of sugar)

Instructions

  • Preheat the oven to 350F/175C
  • Cut 8 slices of bread. I recommend to use a loaf and cut slices off yourself instead of precut bread (but if that is what you have go for it)
  • Slice the apples. No need to peel them. Simply wash them and cut them up in thin slices.
Place the slices in a medium size mixing bowl and toss them with 1-2 tsp of cinnamon.
  • Grease a small (ceramic) baking dish with coconut oil or (vegan) butter and stack the slices of bread in it.
Now slide a slice (or 2) of apple in between each slice of bread.
  • To make the egg mixture whisk together the eggs, milk, 1-2 tsp cinnamon, maple syrup, salt and vanilla in the mixing bowl you used for the apples. Now that everything is combined, pour the mixture over the bread+apples in the baking dish making sure to evenly divide it.
  • Before placing the baking dish in the preheated oven, sprinkle the dish with slivered almonds and a bit of coconut sugar (this is optional although highly recommended). And add some extra cinnamon if you'd like.
  • Bake for 15-20 minutes until the edges of the bread are crispy. Take the dish out of the oven. Your french toast bake is ready to be served!
