I’m back to cheer you up with put-a-smile-on-your-face ice lollies. These rainbow popsicles are so refreshing and full of fruit and veggies!
Make them all, only a few or just your favorite flavor. Or… make multi-flavored ones!
When it is hot, I don’t mind at all if my boys have more than 1 a day. Even two I am fine with since they are all naturally sweetened and colored.
How I make these rainbow popsicles
All these popsicles are made in a blender. I add all the ingredients to my blender bowl and blend it into a smooth consistency. I try to add as little extra water as possible to avoid ice crystals to form during freezing.
A tiny pinch of salt enhances and intensifies the overall flavor of these popsicles.
lime-coconut popsicle
I add lime juice (and optionally the zest), coconut milk, a dash of agave nectar and a pinch of salt to the blender bowl. Then I blend it all into a smooth consistency.
I pour the mixture into a popsicle mold and freeze them for at least 4 hours.
mango-passionfruit popsicle
I add cubes of mango, passionfruit juice (just the juice not the seeds) and a pinch of salt to my blender bowl. Then I blend it all into a smooth consistency. If the mixture is too thick and I can’t blend it, adding just a bit of water helps to get it going. I taste the mixture and if it lacks sweetness, I add a bit of agave nectar and blend it again. Honestly I never have to add agave nectar, the mangos here are so sweet!
I pour the mixture into a popsicle mold and freeze them for at least 4 hours.
strawberry-lemon
I add frozen strawberries, lemon juice and a tiny pinch of salt to my blender bowl. Then I blend it all into a smooth consistency. If the mixture is too thick and I can’t blend it, I add a bit of water to get it going. I taste the mixture and if it lacks sweetness, I add a bit of agave nectar and blend it again.
I pour the mixture into a popsicle mold and freeze them for at least 4 hours.
blueberry popsicle
I add frozen blueberries, lime juice, a bit of honey and a tiny pinch of salt to my blender bowl. Then I blend it all into a smooth consistency. If the mixture is too thick and I can’t blend it, adding just a bit of water helps to get it going.
I pour the mixture into a popsicle mold and freeze them for at least 4 hours.
spinach-pineapple popsicle
I add cubes of pineapple, spinach, a pinch of spirulina (optional) and a pinch of salt to my blender bowl. Then I blend it all into a smooth consistency. If the mixture is too thick and I can’t blend it, adding just a bit of water helps to get it going. I taste the mixture and if it lacks sweetness, I add a bit of agave nectar or honey and blend it again.

kiwi-kale popsicle
I add kale, kiwi and a tiny pinch of salt to my blender bowl. Then I blend it all into a smooth consistency. If the mixture is too thick and I can’t blend it, adding just a bit of water helps to get it going. I taste the mixture and if it lacks sweetness, I add a bit of agave nectar and blend it again.
I pour the mixture into a popsicle mold and freeze them for at least 4 hours.
Multi colored popsicles
You can also fill your popsicle mold with more than 1 flavor. If you want 4-flavor-popsicles use 2 tbsp per flavor to equally fill the mold (so if your mold makes 8 popsicles, you need 16 tbsp=1 cup per flavor!). Start with 1 flavor (so 2 tbsp), freeze it for 30-60 minutes until somewhat firm (enough to hold the next flavor) then pour in the next flavor. Repeat until you have added all your flavors:
These rainbow popsicles are my kids’ favorite. We always have several flavors in our freezer. As a treat to cool off in the afternoon or as dessert on a hot summer night.

Rainbow popsicles

- Popsicle mold
Ingredients
Lime coconut popsicle
- ¼ cup lime juice (and optionally the zest of 1 lime as well)
- ¼ cup coconut milk
- ⅛ tsp sea salt (so a tiny pinch)
- 1-2 tsp agave nectar
Mango passionfruit popsicle
- ⅓ cup cubes of mango
- 3 tbsp passionfruit juice (first sifted out the seeds before measuring )
- ⅛ tsp sea salt (so a tiny pinch)
- 1-2 tsp agave nectar (optional)
Strawberry lime popsicle
- ⅓ cup frozen strawberries
- 2 tbsp lime juice
- ⅛ tsp sea salt (so just a tiny pinch)
- 1-2 tsp agave nectar (optional)(or sub honey)
Blueberry popsicle
- ⅓ cup frozen blueberries
- 2-3 tbsp lime juice
- ⅛ tsp sea salt (so just a tiny pinch)½-1
- ½-1 tbsp honey (or sub agave nectar)
Pineapple spinach popsicle
- ⅓ cup cubes of pineapple
- ⅓ cup baby spinach leaves (stems removed)
- ½ tsp spirulina powder (optional, but recommended)
- ⅛ tsp sea salt
- ½-1 tsp honey or agave nectar (optional)
Kiwi kale popsicle
- ⅓ cup kiwi (sliced or cubed)
- ⅓ cup kale (stems removed)
- ⅛ tsp sea salt
- ½-1 tbsp agave nectar (optional)
Instructions
- Add all ingredients to the blender bowl, but leave out the sweetener for now.
- Blend it all into a smooth consistency. If the mixture is too thick add just a tiny bit of water to help it get going.
- Taste the mixture and if it lacks sweetness, add a bit of agave nectar and blend it again.
- Pour the mixture into a popsicle mold and freeze for at least 4 hours (or leave them overnight just to be sure).
- Remove the popsicles from the mold and share these healthy lollies with the ones you love!
