Our go-to Sunday family breakfast: pancakes and french toast. Who doesn’t like the look of a big stack of each on Sunday morning’s breakfast table? I do, but I am changing it up with this apple cinnamon french toast bake.
French toast made in the oven. What a time saver! Simply cut slices of (whole wheat) bread, stack them together with some sliced apple in a small ceramic oven dish, pour egg mixture over it and slide it in the oven. 5 minutes of work. Now you just wait for it to be ready (or bake pancakes in the meantime). That’s it!
Apple + cinnamon + french toast who doesn’t like that!? Warm wafts of cinnamon-scented air filling the kitchen. Ahhhh… I can’t think of a better way to start my Sunday (or every other day for that matter). What do you think? Let’s make apple cinnamon french toast bake!?
How I make apple cinnamon french toast bake?
I start by slicing bread. This can be whatever type of bread you have on hand. I ussually use whole wheat bread, but I have made it with sourdough and brioche bread before as well. I always use a (homemade) loaf that I cut myself though; no pre-sliced bread.
And I slice the apples as well. No need to peel them. Simply wash and cut them up in slices. I place them in a medium size mixing bowl and toss them with 1-2 tsp of cinnamon.
I grease a small (ceramic) baking dish with coconut oil or (vegan) butter and stack the slices of bread in it. Then I slide a slice of apple in between each slice of bread. Apple slices left? Slide in another slice in between each piece of bread.
To make the egg mixture I whisk together the eggs, milk, cinnamon, maple syrup, salt and vanilla in the mixing bowl I used for the apples. Now that everything is combined, I pour the mixture over the bread+apple in the baking dish, making sure to evenly divide it.
Before placing the baking dish in my preheated oven, I sprinkle the dish with slivered almonds and a bit of coconut sugar. If you love cinnamon as much as I do, you can also add some extra cinnamon.
That’s it! In the oven for 15-20 minutes until the edges of the bread are crispy and your apple cinnamon french toast bake is ready to be served!
Want to changes it up? Here are some other add-ins and flavor combos…
- raisins; use only 1 apple instead of 2 and add half a cup of raisins. Add the raisins with the apple slices before tossing it with cinnamon.
- pineapple; instead of apple use pineapple. To make it more tropical use coconut milk as your choice of milk (or do half/half) and sprinkle with some desiccated coconut on top.
- longing for the holidays (already)? Use gingerbread spice or pumpkin spice instead of cinnamon. So good all year ’round!

Apple cinnamon french toast bake
Equipment
- small (ceramic) oven dish (ideally 10'x6' / 25x15cm)

Ingredients
- 8 slices (whole wheat) bread (or other type of bread)
- 2 medium size green apples (sliced, peel not removed)
- 4 medium size eggs
- 185 ml milk (of choice. I used oat milk)(approx ¾ cup)
- 3-4 tsp cinnamon (divided, plus extra to taste)
- 2 tbsp maple syrup
- 1-2 tbsp coconut oil (or (vegan) butter) for greasing)
- 1 tsp sea salt
- 1 tsp pure vanilla extract
- 2 tbsp sliced almonds (optional for topping)
- 2 tsp coconut sugar (optional for topping)(or other type of sugar)
Instructions
- Preheat the oven to 350F/175C
- Cut 8 slices of bread. I recommend to use a loaf and cut slices off yourself instead of precut bread (but if that is what you have go for it)
- Slice the apples. No need to peel them. Simply wash them and cut them up in thin slices. Place the slices in a medium size mixing bowl and toss them with 1-2 tsp of cinnamon.
- Grease a small (ceramic) baking dish with coconut oil or (vegan) butter and stack the slices of bread in it. Now slide a slice (or 2) of apple in between each slice of bread.
- To make the egg mixture whisk together the eggs, milk, 1-2 tsp cinnamon, maple syrup, salt and vanilla in the mixing bowl you used for the apples. Now that everything is combined, pour the mixture over the bread+apples in the baking dish making sure to evenly divide it.
- Before placing the baking dish in the preheated oven, sprinkle the dish with slivered almonds and a bit of coconut sugar (this is optional although highly recommended). And add some extra cinnamon if you'd like.
- Bake for 15-20 minutes until the edges of the bread are crispy. Take the dish out of the oven. Your french toast bake is ready to be served!
