There is nothing like enjoying homemade fruity popsicles on a hot day. I have been making my own for a long time now. Why? Just because it is super easy and healthier than store bought. This way I don’t mind if the kids have more than 1 a day. Ripe fruit is what makes these naturally sweet. Ready for a fruity summer explosion?
What fruits do you use for these popsicles?
Today we are making mango – coconut – pitaya popsicles. But honestly the fruit options and combinations are endless for these fruity popsicles;
- 1 fruit flavor, 2 layers, 3 layers (like mine here), or even 4;
- strawberry, lemon, lime, peach, watermelon are just a few of the fruit options that you can use in these fresh fruit popsicles;
- these can be made with other things than fruit as well; coffee, vanilla, chocolate, caramel.
Like I said, the combination are endless. But today I am presenting you this fruity popsicle:

Mango layer:
The bright color of mango screams summer to me. It fits perfectly in this fresh fruit popsicle. The flavor of mango is irresistible and it goes great with coconut. I freeze mango cubes the night before so when its blend, it is already slushy and freezes quicker. Having said that, using fresh mango works as well. I blend mango and 1 or 2 table spoons of lime juice to enhance the flavor a bit. That’s it, your first layer is ready to be poured/scooped into the ice cream mold.
Coconut layer:
Coconut flavor is always so tropical. I love it. For this layer I mix coconut milk, lime juice and a bit of coconut cream. And that’s it, the second layer of this fruity popsicle is ready to be poured on top of the first layer (once that layer is semi frozen).
Pitaya layer:
Pitaya or dragonfruit has such a vibrant color, but more importantly it has great health benefits; it contains lots of vitamins and minerals. It also is a good source of fiber and protein. Because pitaya doesn’t have a lot of flavor I blend frozen pitaya cubes with pineapple and lime juice in a blender. Once the second layer has hardened enough this final layer can be poured/scooped on top to fill the mold of this tropical fruit popsicle a little below the rim. A couple of hours later you have fresh fruit popsicles to hand out!
My kids really like to help me out making these; they fill the blender, scoop the different layers into the mold, they place them in the freezer and then wait in front of it until they are ready (no just kidding).

I serve them as dessert on a hot day, as an afternoon treat or to cool down on any given time of the day. I always have a few different flavors in my freezer right next to my vegan magnums, ice cream sandwiches, chocolate bark and chocolate almond cups.
Fruity popsicles
Equipment
- Blender
- Popsicle mold
Ingredients
Mango layer:
- 1 cup ripe mango (cubed, frozen). You can use fresh mango as well, freezing time will be more though
- 1-2 tbsp lime juice (to taste)
Coconut layer:
- 1 cup coconut milk
- 2-3 tbsp lime juice (to taste)
- 1-2 tbsp coconut cream (add for sweetness to taste)
Pitaya layer:
- ¾ cup pitaya (cubes, frozen)
- ¼ cup pineapple (cubed)
- 2-3 tbsp lime juice
- 1-2 tbsp liquid sweetener (optional)(like agave syrup or honey if not vegan)
Instructions
- Blend all mango layer ingredients in a blender. And pour/scoop into a popsicle mold, filling it up ⅓. Freeze for 1 hour (if using frozen mango) or up to 2 hours for fresh mango.
- Mix/blend all coconut ingredients in a blender. And pour op top of the mango layer. Filling it up another ⅓ of the mold. Now there is ⅓ left to be filled.
- Blend all pitaya ingredients in a blender. And pour/scoop into a popsicle mold, filling the mold completely (just below the rim). Freeze for 1 hour (if using frozen pitaya) or up to 2 hours for fresh pitaya. Freeze your 3 layered popsicles for 3-4 hours.
