Herb sweet potato mash
Herb sweet potato mash is our favorite Thanksgiving side dish. It is quick & easy to make, has the right mix between savory and sweet and is just so delicious!

- 2 lbs sweet potatoes (peeled and cubed)
- 2 tsp sea salt
- 2 cloves garlic (minced)
- ¼ cup fresh parsley (finely chopped)
- ¼ cup fresh celery leaves (finely chopped)
- 2 tbsp fresh thyme leaves (twigs removed)
- 3 tbsp greek yogurt
- 2 tbsp butter (can be vegan butter or sub olive oil or as I often do use 1 tbsp olive oil and 1 tbsp butter)
- 1 pinch sea salt (to taste)
- ½ tsp freshly ground black pepper (to taste)
Peel, cut and add the sweet potatoes to a large stock pot. Add just enough water to cover the sweet potatoes by about 1". Add 2 tsp salt to the water and boil the sweet potatoes for 8-10 minutes (or until a fork easily slides in the sweet potato).
Drain the water from the boiled sweet potatoes and mash them in the same pot you boiled them in.
Add the herbs and yogurt (reserve some for garnishing), garlic, butter and/or olive oil. Season with some extra salt and freshly ground black pepper to taste.
Transfer the mashed sweet potatoes to a serving bowl. As a finishing touch add the remaining herbs, a dash/swirl of yogurt and extra freshly ground black pepper and sea salt to taste.
