I’m back with a snack! Or you can call it a light lunch. I don’t like wasting food so whenever we have had tacos and there are leftover tortillas, my boys ask for tortilla pizza the next day. It is my kids’ favorite savory snack. Easy and quick to make. And pretty healthy, so this mama approves.
Whenever I meal prep for the week I make sure I make more of some of the key items and freeze or refrigerate it for later use. Like oven roasted tomato sauce for example. I use the sauce to make spaghetti and (meat)balls, but if I plan to make tacos I use the same sauce to make tomato salsa to accompany the tacos. That exact same sauce I use for pizza and also these tortilla pizzas.
So you can put together these tortilla pizzas in 15 minutes, because that is how long it takes to preheat the oven and bake these tortilla pizzas.
In the meantime prepare your toppings. Whatever you like on it; cut it, chop it, toast it. Below you will find some of our favorite toppings.
How do I make these tortilla pizzas?
I place a tortilla on a (round) baking sheet. Depending on the size of the tortilla, I add more than 1 (on my round baking sheet, 3 tortillas fit easily). I either make the tortillas myself, or if I am pressed for time, I use store-bought tortillas.
I spread some tomato sauce on each tortilla like you would on a regular pizza. I make the sauce myself from tomatoes that I slow roast in the oven and then blend like this:
Now I add my toppings on it and some grated cheese.
After that my tortilla pizza is ready to go into the oven. They don’t need long. Within 5 minutes they will come out golden brown with crispy edges and melted cheese on top.
This is the perfect recipe for kids to help out with. Let them prepare their own tortilla by cutting their own toppings, grating cheese, spreading tomato sauce on the tortilla and decorate it.
We top ours like we top our pizzas, but here are a few other fun topping ideas:
- Mexican style; beans-corn-bell pepper-pineapple-red onion;
- Grilled chicken and fresh oregano;
- Arugula, fresh peppermint leaves and peppermint pesto;
- Steak strips and some extra gorgonzola;
- Roasted veggies; bell peppers, zucchini, egg plant and fresh herbs like rosemary, basil and oregano.

Serve them for lunch instead of pizza. Or instead of a sweet snack like granola bars or chocolate chip cookies, in the afternoon when the kids come home from school. They are totally adjustable so you can keep on serving different versions.

Tortilla pizza
Equipment
- large baking sheet
Ingredients
- 4 whole wheat tortillas (recipe for homemade tortillas in Notes)
- 1 cup oven roasted tomato sauce (recipe for homemade oven roasted tomato sauce in Notes)
- 1 cup cheese (mozzarella or other (vegan) cheese; grated)
- 1 cup toppings (of choice)(optional)
- ½ tbsp olive or avocado oil (for greasing the baking sheet)
Instructions
- Preheat oven as hot as your oven will go (about 440F/225C) for about 15 minutes.
- Prepare your toppings. Whatever you like on it; cut it, chop it, toast it. And grate some cheese.
- Lightly grease a baking sheet with some olive or avocado oil and place 4 tortillas on it.
- Spread 1-2 tbsp tomato sauce on each tortilla. Add your preferred toppings and finish off with grated cheese.
- Slide in the oven for about 5 minutes or until the edges are golden brown and crispy. If you are using fresh herbs or arugula sprinkle it on after they come out of the oven. Your lunch is ready. Enjoy!
