I love easy summer salads! Their vibrance lightens up the meal. It’s like having a bouquet of flowers on the table. This strawberry watermelon summer salad is one of our favorites.
I know salads are a hard one to sell to kids, but I have noticed that if there are a lot of things in the salad they like – fruits, avocado, nuts, cold cuts – they are more likely to try it. This salad is an easy sell; my kids love it!
How I make this strawberry watermelon summer salad?
This strawberry watermelon summer salad comes together very easily, just some chopping, mixing, shaking and serving!
the dressing
I add all the dressing ingredients – balsamic vinegar, extra virgin olive oil, honey, salt and pepper – to a dressing shaker (a tall container with lid works as well) and I give it a good shake to combine it all.

I use a big salad bowl to combine all the salad ingredients – strawberries, cubes of watermelon, mint and/or basil – in with salad thongs. To make this a dinner salad, I often add cucumber slices, lamb’s lettuce (or other mild, soft lettuce) and even cooked and cooled quinoa to it.
To finish this strawberry watermelon summer salad, I add some of the dressing to it and, using the salad thongs, combine the dressing and the salad. The rest of the dressing I serve on the side.

Equipment
- salad thongs (or other serving utensils)
Ingredients
The dressing
- ½ cup extra virgin olive oil
- ¼ cup balsamic vinegar
- 1-2 tsp honey (to taste)
- salt and pepper (to taste)
The salad
- 2 cups (small) strawberries (cleaned and cut in 2 (if too large)
- 2 cups watermelon (cubed)
- 1 handful fresh mint leaves (chopped)
- 1 handful fresh basil leaves (chopped)
- ½ medium cucumber (small cubes or slices)q
- 2 cups (lamb's) lettuce
Instructions
