Our default, at-least-once-a-week dinner is tacos; Taco Tuesday. It is an easy, healthy dinner and most importantly loved by the kids. I have already shared my new guacamole recipe with you. Now it is time for this amazingly flavorful roasted tomato salsa; oven roasted tomatoes blended smooth with some chipotle and combined with lime juice, red onion, garlic, cilantro, cubed pineapple and diced tomato. I always make a big batch every once in a while and store it in the fridge (you can even freeze it!) so that Mexican night is ‘fast-and-easy-night’ for mommy!
My kids don’t eat this salsa (yet), but they will one day. Without it, Tacos Tuesday is boring so this one is for mom and dad. Let’s make some roasted tomato salsa!
How to make roasted tomato salsa?
This 10 minute, 8 ingredient, 1 bowl recipe starts with roasting your tomatoes. What I usually do is I save a few from when I make oven roasted tomato sauce. Blend the tomatoes like you are making a sauce. Add chipotle and blend some more.
Now it is as simple as adding your other ingredients; diced tomatoes and red onion for some texture, cilantro leaves, lime juice, garlic and cubed pineapple for extra depth of flavor and salt and pepper to finish it off.

This roasted tomato salsa goes really well with tacos, burrito and enchilada or just dip it in some homemade tortilla chips. I serve it with guacamole, beans, homemade tortillas and chips on Tuesdays (or any other day of the week).
Roasted tomato salsa
Ingredients
- 6 oven roasted tomatoes*
- 1 chipotle in adobo
- 1 tomato (diced)
- 1 bunch of cilantro (finely chopped)
- 1 small red onion (finely diced)
- 1 clove of garlic (finely diced)
- 1/3 cup of pineapple (cut into small chunks)
- 1 lime (juiced)
- 1/2 tsp fine sea salt
- 1/2 tsp freshly ground black pepper
Instructions
- If you haven't yet roasted your tomatoes, do this first. And let them cool off**
- Blend the tomatoes like you are making a sauce. Add the chipotle and blend some more.
- Add diced tomato, red onion, cilantro, lime juice, garlic, pineapple, salt and pepper to the blended tomato mix
