I am back with yet another wholesome summer pizza! This pizza has so much flavor. This roasted balsamic cherry tomato and caramelized red onion spread pizza is truly my favorite pizza of all times!
Juicy, slightly acidic roasted balsamic cherry tomatoes on top of creamy, sweet caramelized red onions, topped with arugula and basil and some saltiness from freshly shaved parmesan. Do I need to say more? Let’s bake this roasted balsamic cherry tomato pizza with caramelized red onion paste!
How I make this Roasted balsamic cherry tomato and caramelized red onion spread pizza?
Prepare the pizza dough
Whenever I make a pizza, this is the pizza dough recipe I use. Wholewheat pizza dough is just so much better to me, but you can make your own (regular) pizza dough as well. You can even use store bought!
I start by making the pizza dough for this roasted balsamic cherry tomato pizza with caramelized red onion paste. Since the dough has to rise, this is what I do first.
Roast the cherry tomatoes
I start by checking my cherry tomatoes. Are there any larger ones? If so, I cut them in half, small ones I leave whole.
I spread the cherry tomatoes out on a lined baking sheet and I drizzle balsamic vinegar and olive oil on them and I add some salt and pepper. Then I slide the baking tray in the preheated oven for 15-20 minutes. I make sure not to leave them in the oven too long though, since they will go in the oven again on top of the pizza.
Caramelize the red onions
After I have cut the red onions in rings, I heat up a skillet with a bit of olive oil. I add the onions rings and I let them caramelize on low for 10-15 minutes until they are soft and falling apart. I either blend them or just use a fork to mash them into a paste/puree.
Make tomato sauce
When the cherry tomatoes are roasted I take them out of the oven. Half of them I blend into a sauce. This is optional, you can also just leave them all whole. You can also puree all of them (but then your pizza will look like a regular margherita pizza). Your choice. I do sometimes for my kids…
Roll out the pizza dough
All the ingredients for the pizza are ready, so it’s time to roll out the pizza dough. I like to roll it out thin. The edge will bounce back anyway so the crust will be a bit thicker.
Add all the ingredients to the pizza bottom
The first layer I add is the caramelized red onion paste. I thinly spread it out all over the pizza bottom.
Now I add tomato sauce on top of the onion paste. This is optional. If you decide not to make sauce with half of the roasted cherry tomatoes, skip this part.
And lastly, I decorate the pizza with lots of roasted balsamic cherry tomatoes.
Bake the pizza
In a hot oven I bake the pizza for 12-15 minutes until the edges are golden brown and then I take it out to garnish

To add even more depth of flavor, I often times add some arugula leaves and freshly shaved parmesan to it. But this is optional; this pizza is so good as it is already.
Now I slice the pizza and it’s ready to serve!
I love making my own pizza. And my kids like to help out. Making pizza together is so much fun! My kids roll out the dough, add sauce to it and put it in the oven (with my help). When they are involved in the making of dinner, they are more likely to try new things, like this roasted balsamic cherry tomato and caramelized red onion spread pizza. Roasted balsamic cherry tomato pizza with caramelized red onion paste
Equipment
- pizza stone or baking tray
Ingredients
- 4 pieces (homemade wholewheat*) pizza dough
Roasted balsamic cherry tomatoes
- 8 cups cherry tomatoes
- 4 tbsp balsamic vinegar
- 4 tbsp olive oil
- salt and pepper (to taste)
Caramelized red onion spread
- 3 medium red onion (cut into thin rings)
- 3 clove garlic (whole, peeled)
Garnishing (optional)
- 1 handful arugula leaves
- 1 cup freshly shaved parmesan
- freshly chopped herbs (like thyme, oregano and/or rosemary)
Instructions
Make the pizza dough and let it rise
- Start by making the pizza dough. Since the dough has to rise, this will take the longest. In the meantime you can continue with the garnishing.
Roast the cherry tomatoes
- Preheat the oven to 165C/325F and line a baking tray with parchment paper.
- Cut larger cherry tomatoes in half before spreading them all out on the prepared baking tray. Now drizzle them with balsamic vinegar and olive oil and add some salt and pepper to them.
- Slide the baking tray in the preheated oven for 15-20 minutes. Make sure the cherry tomatoes don't turn too dark since they will go in the oven again on top of the pizza.
- Leave the oven on an rise the temperature to 240C/465F or as high as your oven will go.
Caramelize the red onions
- Heat up a skillet with a bit of olive oil and add the onions rings. Let them caramelize on low for 10-15 minutes until they are soft and falling apart.
- Now either blend them (in a blender) or just mash them with a fork.
Make tomato sauce (optional)
- When the cherry tomatoes are roasted, blend half of them into a sauce. This is optional, you can also just leave them all whole. Another option is to puree all of them (but then your pizza will look like a regular margherita pizza). Whatever your preference.

- Roll out the pizza dough.
- Spread out the caramelized red onion paste thinly over the pizza bottom.
- Add tomato sauce on top of the onion paste. This is optional. If you decide not to make sauce with half of the roasted cherry tomatoes, skip this part.
- Add the roasted cherry tomatoes on top of the pizza.
- Bake the pizza for 12-15 minutes until the edges are golden brown.
Garnish the pizza
- Garnish the pizza with some arugula leaves and freshly shaved parmesan.Now slice the pizza and it's ready to serve!
