Do you ever run out of lunchbox snack ideas? I’ve got you covered! I came up with these no bake apple pie bites the other day; I was craving apple pie, but too lazy to turn on the oven, my kids asked for edible cookie dough and than I thought what about apple bites?
These no bake apple pie bites are so easy to make in less than 10 minutes. They are packed with good-for-you ingredients, but most importantly they are delicious! Let’s make a plate full of apple pie bites!
How to make these no bake apple pie bites?
Like I said, this is an easy one. I start by putting all the ingredients in my food processor (a high speed blender works perfectly as well) and pulse until I have a crumble dough. I say pulse and not blend, because I want to keep an eye on it; I don’t want to over process it otherwise I’ll end up with a thick, mushy consistency. Bits and pieces are what you still want to see.
Now I roll balls the size of a golf ball with my hands out of the dough and place them on a plate.
Next up, the pecan crumble. Same thing, I add all the crumble ingredients – toasted pecans, coconut sugar and cinnamon – to the blender bowl and pulse until I have a sand like texture (maybe a bit more coarse than sand, see pictures above and below).
Once I have the balls and the crumble, I roll the apple bites through the pecan crumble until the balls are entirely covered with crumble.
And that is it! My no bake apple pie bites are ready to serve. It is that easy! They are the perfect Netflix binge-watch munch-away, lunchbox snack or after school treat.

Equipment
- food processor or high speed blender
Ingredients
Ingredients apple bites
- 300 gr almond flour (or sub almond meal)(approx. 2½ cups)
- 45 gr oat flour (approx. ½ cup)
- 2 tbsp arrow root powder (or sub tapioca flour or sub corn starch)
- 1 medium green apple (not peeled, cut into chunks)
- ⅓ cup maple syrup (or sub honey or agave syrup)
- 2 tbsp coconut oil (melted)
- 1 tsp cinnamon (or use pumpkin spice or gingerbread spice to give it a holiday vibe)
- pinch salt
Ingredients pecan crumble
- 125 gr pecans (toasted)(approx. 1 cup)
- 1 tbsp coconut sugar (or sub brown sugar)
- 1 tsp cinnamon
Instructions
- Put all the apple bite ingredients in the bowl of a food processor/high speed blender and pulse into a crumbly dough. Make sure not to over blend it otherwise you'll end up with a thick, mushy consistency. You still want to be able to see bits and pieces.
- Roll balls the size of a golf ball with your hands out of the dough and place them on a plate.
- Add all the pecan crumble ingredients to a blender bowl and pulse into a coarse sand like texture
- Now roll the balls through the pecan crumble until they are entirely covered with crumble.
- That's it! They are ready to be serve. Or you can store them in an airtight container for 1-2 days. Keep them in the fridge though.
