Friends behold! I am sharing with you my life saver recipe. The most versatile and frequently made recipe in this household, oven roasted tomato sauce.
Obviously my boys like pasta, as most kids do. This sauce goes over it, and voila, a healthy meal. Add vegan meatballs and double voila! Add broth and here is your next meal, tomato soup. I can go on and on. Perfect for meal planning!
Anyway, you understand this is a big one. Here we go!
How to make homemade oven roasted tomato sauce?
This 6-ingredient recipe starts with halved tomatoes, that have been slow roasted in the oven. Slow is the key word here. You don’t want them to burn and stick to the bottom of the baking tray. You want the liquid to slowly evaporate, so that it creates a deep and rich flavor.
let your kids help out
I usually have the kids help me cut the tomatoes in half. The tomatoes are to be put in a large baking dish, sprinkled with oregano or Italian herbs, and thereafter drizzled with balsamic vinegar and olive oil. Depending on how old your kids are they can help with this! Mine are 10 and 12, and they are totally capable of doing all of this (even without my supervision).
slow roast for a couple of hours
Slide the dish in the oven for a couple of hours. They will come out bubbly and smelling incredible.
To give this sauce extra depth of flavor, I often add a few cloves of garlic and an onion cut into rings, 15 minutes prior to taking the tomatoes out of the oven.
blend into a silky smooth sauce
Now it is time for magic. Once I have put the roasted tomatoes in a large stockpot I use a hand blender to turn the tomatoes into a smooth sauce. No lumps so my kids won’t put up a fight and even ask for seconds!

This sauce pairs well with any pasta, mashed potato and vegan meatballs and as pizza sauce. Blend in a chipotle in adobo and there is the salsa for your tacos, like my homemade roasted tomato salsa. I even use it to make homemade BBQ sauce!
Homemade oven roasted tomato sauce
Ingredients
- 10 medium size tomatoes (cut in 2 (lenghtwise))
- 3 tsp dried oregano
- 4 tbsp balsamic vinegar
- 4 tbsp extra virgen olive oil
- 1 small (red) onion (cut into rings)
- 3 cloves garlic (whole, peeled)
- 1 tsp fine grain sea salt
- a few cracks of black pepper
Instructions
- Preheat the oven to 320F/160C.
- Divide halved tomatoes over a 12″x10″ roasting pan, cut side up. Sprinkle with oregano and drizzled with balsamic vinegar and olive oil.
- Place your roasting pan in the oven on the middle rack. Roast for 2-2½ hours.
- 20 minute before your tomatoes are ready, add the onion and garlic to the roasting pan. By now your tomatoes have shrunk considerably so you can move them over a bit to make space for the onions and garlic.
- After 2-2½ hours take your roasting pan out of the oven and let the tomatoes cool off for a bit. Transfer to a sauce pan and use a submergible blender to blend to a smooth sauce. Or transfer to a blender to blend to a sauce (just make sure the tomatoes are cooled off considerably; most blenders don't like hot content).
- Add salt and pepper to your liking. I usually add 1 tsp of fine grain sea salt and a few cracks of freshly grounded black pepper.
- Your sauce is ready to serve (over fresh (zucchini) noodles)!
