What do you call thick, creamy yogurt? Cottage cheese? Labneh? Or just creamy yogurt or even fresh cheese yogurt or yogurt cheese? Anyway, it is the star in this parfait; homemade creamy yogurt and mango mousse parfait.
This creamy yogurt parfait is nutritious, naturally sweetened and only requires a few ingredients to make. And while I usually serve it for dessert, you can prep it (ahead of time) for breakfast as well or even as a healthy after school snack.
How I make homemade creamy yogurt and mango mousse parfait?
strain the yogurt
To make the homemade creamy yogurt, it has to be strained. Depending on how thick I like it to be, this will take between 4-12 hours. For parfaits I would say 4-6 hours is enough. When I leave it overnight, it really gets the consistency of cream cheese*. And I do that all the time as well. Makes for the best bagels!
To strain the yogurt for the creamy yogurt and mango mousse parfait I take out a colander, a tea towel or large piece of cheese cloth and a bowl.
I place the colander on top of the bowl and place the tea towel in the colander. I pour the yogurt in the tea towel. To prevent spilling, I usually tie the towel together (like a pony tail).
make the mango mousse
I add cubes of mango and coconut cream (the top part of a can of refrigerated coconut milk; scoop of the thick creamy part) to a blender. After blending it into a smooth and creamy consistency I taste if it lacks flavor. Mangos here are mostly bursting with flavor, but even then it might need a bit of a kick. If that is the case, I add a splash of lime juice.
Assemble the parfait
To assemble this creamy yogurt and mango mousse parfait, I use granola as a bottom layer and finish it off with cocoa puffs, but the options are limitless. Anyway, I scoop some granola in a wide glass and then altered between yogurt and mango mousse. I sprinkle it with homemade cocoa puffs. And that is it!
Alternative parfait fillings
- Instead of strained yogurt you can use store bought Greek yogurt or thick plant based yogurt. Btw, you can also strain non dairy yogurt!
- Instead of mango mousse you can, for example, make strawberry mousse;
- Instead of homemade granola you can add cocoa puffs, cookie crumbs or fruit compote;
- Instead of cocoa puffs you can top the parfait with puffed quinoa, chia seeds, chopped nuts or seeds.
Other uses of strained yogurt
When left overnight, the yogurt really gets the consistency of cream cheese*. It makes for the best bagel topping!
To make homemade cream cheese; just leave it to strain longer (overnight) than mix in a pinch of salt and optionally some lemon zest and dried oregano. Roll the ‘yogurt cheese’ into little balls. To store them, add olive oil to a small jar and add the cheese balls.

- 4 small glass jars
Ingredients
- 3 lbs yogurt (yogurt of choice)
- 2 large ripe mango (cubed)
- 2 cans coconut milk (the creamy part at the top of a can of refrigerated coconut milk)
- 1 lime (juiced, optional)
- 1 cup granola (of choice)
- 4 tbsp puffed quinoa (or homemade** cocoa puffs)
Instructions
Strain the yogurt
- To strain the yogurt, take out a colander, a tea towel or large piece of cheese cloth and a bowl. Place the colander on top of the bowl and place the tea towel in the colander. Pour the yogurt in the tea towel. To prevent spilling, tie the towel together (like a pony tail).
Make the mango mousse
- Add mango cubes and coconut cream (the top part of a can of refrigerated coconut milk; scoop off the thick creamy part) to a blender. After blending it into a smooth and creamy consistency taste it. If it lacks flavor, add a splash of lime juice.
Assemble the parfaits
- Scoop granola in the glass jar. This will be your bottom layer. Now add altered layers of creamy yogurt and mango mousse. Sprinkle puffed quinoa or homemade cocoa puffs on top to finish it off.
