I have been on a quest to put together the best chocolate chip cookies that are gluten free and vegan. I wanted a bakery-style cookie with complex flavor, crispy edges and most important approval of my kids (read.. with lots of chocolate and not too much chunks). And on top of that they needed to come together quick and easy. You get it, sometimes you crave a good cookie and you want it straight away! Well, I can tell you after a lot of trying, testing, adjusting, I have come up with just that; almonds and oats chocolate chip cookies. Let’s bake!
10 ingredients and less than 10 minutes of your time to put the dough of these healthy almonds and oats chocolate chip cookies together. Within less than half an hour you will have cookies to devour!
How to make these almond and oats chocolate chip cookies?
To keep the cookie vegan, the recipe calls for aquafaba instead of eggs. Aquafaba, the liquid of a can of chickpeas, helps the cookies to puff up and crisp on the edges. It is beaten with a hand mixer until it is light, fluffy and loose peaks have formed.
In a separate bowl all dry ingredients – almond meal, chocolate chips, oats, baking powder, salt and organic brown sugar – are mixed together.
To the stiff aquafaba, coconut oil and vanilla extract is added and whisked to combine. Now the dry ingredients are added and mixed until just combined. It should be a firm, kind of tacky dough.
Now there are 2 ways to go; you either form cookies straight away, bake them and eat them (all) or you first chill the dough for 30 minutes, which makes the dough a lot easier to handle. It is up to you. I have tried both and it has no effect on the end result so I guess it depends on how much you are craving cookies.
You can even make the dough ahead of time and chill overnight. It is also freezable. So you can totally freeze it for future late night cookie cravings.

Healthy chocolate chip cookies
Equipment
- hand mixer
Ingredients
- 65 gr almond meal (or almond flour for a smoother/ less chunky cookie)(approx ¾ cup)
- 75 gr rolled oats (depending on your preference you can use just rolled oats, rolled oats + quick oats or even just oat flour… I used 45 gr (½ cup) oat flour + 30 gr (⅓ cup) quick oats)
- 60 gr (dark vegan) chocolate chips (approx. ⅓ cup)
- 20 gr desiccated coconut (approx. ¼ cup)
- 1/2 tsp baking powder
- 1/4 tsp fine grain sea salt
- 25 gr organic brown sugar (or use coconut sugar)(approx. ⅓ cup)
- 1/4 cup aquafaba (liquid of a can of chickpeas)
- 12 gr coconut oil (melted)(3 tbsp)
- 1/2 tsp vanilla extract
Instructions
- In a large mixing bowl mix almond meal, chocolate chips, oats, baking powder, salt and organic brown sugar. Set aside
- In a separate mixing bowl beat aquafaba using a hand mixer until light, fluffy and loose peaks have formed (add a bit of cream of tartar if aquafaba doesn't stiffen up)
- To the stiff aquafaba add coconut oil and vanilla extract and whisk to combine.
- Then add to the dry ingredients and mix until just combined. It should be a firm, kind of tacky dough
- Preheat oven to 375F/190C
- Chill for 30 minutes or immediately scoop out 1 1/2tbsp of dough and place on a with parchment paper lined baking sheet and lightly press each scoop down. There should be around 10 cookies.
- Bake for 12-15 minutes or unti edges are golden brown
