Tuesdays are for tacos, but tacos are not only for Tuesdays! Here in this household it is always Taco Tuesday! That’s how much we love tacos!
‘Roll your own dinner’ as we call it here at our home. Everyone here loves Taco Tuesday, because they get to stuff a tortilla to create their own delicious taco. I put out a large spread including guacamole, oven roasted tomato salsa, homemade tortillas, veggies and chicken stir fried with my family friendly Mexican spice mix and beans. I serve it with lime wedges for an extra kick and ‘sour cream’ (yogurt, lime juice and a drop of honey; my kids’ favorite!) and homemade tortilla chips. And voilà, instant feast! Roll your own taco. Let’s get going!
I hear you thinking: ‘that’s sounds like a lot of work’. There are a few tricks to this that will make it a lot easier.
How I get this Taco Tuesday spread on the table (fairly quickly):
- I make big batches of most of the dishes and freeze them. I do this with beans; you just have to reheat them. And also with tortillas; they freeze well and you only have to thaw them and pop them in the oven for a few minutes (wrapped in aluminum foil). Cut a few up and make tortilla chips like this in a few minutes as well.
- When I plan this meal I usually plan a pasta with homemade tomato sauce night as well. With the sauce from this dish I create a quick salsa like this for Taco Tuesday (the salsa will keep well in the fridge so you can make a large batch and keep part of it in the refrigerator). I do the same with beans; I make a big batch and I use them for meat(less) balls, gallo pinto and this meal.
- And… I have the kids help me! They can make guacamole by theirselves by now and always help me make tortillas. In the beginning it’ll actually take longer, but I promise you, after a few times they will be able to do it on their own. Time saver and family quality time in the kitchen!

A new recipe I want to share with you here is my pineapple ginger salsa. I have been serving it next to my roasted tomato salsa when we do our Mexican night and it is so flavorful. You have to try it! You won’t be disappointed. I promise. I popped the recipe below for you.
Taco Tuesday here in my house consists of:
- tortillas
- tortilla chips
- guacamole
- tomato salsa
- (refried) beans
- chicken, fish and/or veggies stir fried using my Mexican spice mix
- ‘sour cream’; (non dairy) yogurt, lime juice and a drop of honey
- pineapple salsa (you will find the recipe below)
This meal is on the table at least once a week here at my home. So I can say it is a winner (and for sure a keeper!); we all love it so much! What do you think? Will you give this a try? It is:

Pineapple ginger salsa
Equipment
- (hand) blender
Ingredients
- 1 cup pineapple (cubed)
- 1 handful cilantro leaves (chopped)
- ½ cup red onion (chopped)
- 1 clove garlic (minced)
- 1 jalapeño (chopped, no seeds)(start with 1/3 and adjust to taste)
- 1 tbsp white vinegar (or apple cider)
- 2 tbsp fresh ginger (minced)
Instructions
- Put all the ingredient in a blender and pulse shortly for a chunky salsa. Blend longer for a smoother salsa
