We love apple season, because we love baking with apples; Dutch apple pie, homemade apple sauce, cinnamon apple french toast bake and these apple muffins. They are great as an after school snack, an on-the-go breakfast, pre- or post workout treat. I even serve these to my boys for dessert.
These healthy apple oatmeal muffins are quick and easy to make, healthy and so delicious. Ready for some fall baking!?
10 ingredients, 5 minutes to prep the batter and 25 minutes to get these muffins golden brown in the oven.
Did I mention they are SO simple to make? Just mix oats and baking powder. Mix the rest of the ingredients in another mixing bowl. Now mix it all together, divide over a muffin tin and slide it in the oven. Make yourself some coffee while they are baking and soon enough your breakfast is ready!

Healthy apple oatmeal muffins
Equipment
- muffin tin
- Saucepan
Ingredients
- 3 cups gluten free oats (you can use quick oats as well, but texture will be different)
- 2 tsp baking powder
- 1 cup milk (I used almond milk, but you can sub regular milk or other type of milk)
- 2 Granny Smith apple (1 apple: peeled and diced, the other: peeled and cut into large chunks = for the apple sauce) (if using store bought apple sauce you will need ½ cup and you only need 1 apple)
- ¼ cup maple syrup
- 2 tbsp coconut oil (+ extra for greasing the muffin tin)
- ½ tsp sea salt
- 2 eggs
- 1½ tsp ground cinnamon
- 1 tsp vanilla extract
- ½ cup raisins (optional)
Instructions
- Preheat oven to 375F/190C
- To make the apple sauce: add the large chunks of apple and a bit of water to a saucepan. Bring to boil, turn the heat to low and let simmer for about 10 minutes until the apples are soft. Now mash the apples with a masher until smooth. Let cool off a bit before adding to the other ingredients. You can skip this step if you use store bought apple sauce
- In a medium size mixing bowl mix oats and baking powder.
- In another mixing bowl mix the rest of the ingredients including the apple sauce you just made.
- Add oat mixture to the other bowl and stir well to combine.
- Grease a muffin tin or line with muffin paper.
- Divide batter over muffin tin and slide into preheated oven. Bake for 25-30 minutes.
- Let cool off for 5 minutes in the muffin tin. Now transfer muffins to a cooling rack for further cooling (if you can resist). Store in an airtight container at room temperature, but in my opinion they are best fresh out of the oven.

Thanks for this recipe Marielle! I’m not much of a baker, so I was already happy when the muffins came out of the oven and that they smelled and looked delicious. But then the taste made me even happier. A subtle sweet flavor with a crunchy outside and a soft inside. Also my sister and nephews showered me with compliments after eating them.
