And I am here to spread the meal planning/prep-love with my 10 favorite family weekday meals and my 6 favorite back to school breakfast recipes that are so easy to prep ahead of time:
All of these breakfast recipes are:
- nutritious
- made with wholesome ingredients
- quick and easy to make. Some even within 10 minutes!
- tested on kids and adults; ‘sophisticated food’ (aka food that doesn’t look like mashed baby food) that both kids and adults enjoy to eat
My 6 favorite back to school breakfast recipes
These are my current 6 favorite breakfast recipes:
- Mango coconut chia pudding
- Healthy banana snickers shake

1. Mango coconut chia pudding
Chia pudding is the ultimate make-ahead-of-time breakfast recipe and therefor one of my 6 favorite back to school breakfast recipes! I love this mango coconut chia pudding, but the combinations are endless; combine stone fruits, forest fruits or tropical fruits with coconut milk or yogurt, almond milk, oatmeal milk or even orange juice.
I make mine the evening before and mostly several more for the days to follow. This way I have breakfast ready in the refrigerator waiting for me. SWOON!
2. Healthy banana snickers shake
Breakfast shakes or smoothies are an easy and quick choice for breakfast as well. This banana snickers shake is so chocolatey and rich, it is almost dessert! But other, more fruit based smoothies are great as well. Check out my 3 favorite avocado smoothies for example.
I always make sure I have cubed frozen fruit in my freezer. Once a week I cut up overripe bananas, mango, pineapple and sometimes papaya and freeze them in separate ziplock bags to have frozen fruits at hand. I do the same with coconut milk, yogurt and orange juice (I use an ice cube mold for it). Making my smoothie in the morning will cost my less than 10 minutes! TA-DA, another great quick and easy breakfast recipe.
3. Gallo pinto bowl
Gallo pinto – rice & beans mixed together – is on our menu a lot. It is the national dish of Nicaragua and a staple in every nicaraguan household.
I usually make a large batch ahead of time and freeze it in 1-person portions. The night before I transfer a bag to the fridge. In the morning I only have to heat it up, make scrambled eggs, and serve it with pico de gallo and mashed or cubed avocado and breakfast is ready!
This gallo pinto bowl is my savory addition to my 6 favorite back to school breakfast recipes list. It totally deserves a spot on it!
4. Blueberry oatmeal bake
Ok, this blueberry oatmeal bake takes a bit longer to prepare, so usually I make it in the weekend. It is plenty for several breakfasts, so the only thing I have to do the next day is heat it up and serve it with a dollop of (coconut) yogurt (or not).
Since this recipe is easy to make ahead of time it made it to my 6 favorite back to school breakfast recipes list!
5. Quinoa breakfast bowl
Leftover quinoa from dinner? I turn it into this delicious and nutritious quinoa breakfast bowl. I always add toasted nuts and cinnamon to it. And sometimes chia jam, or frozen forest fruits that I heat up. Click on the link for all the details and different add-ins.
Since the quinoa is cooked already, this breakfast recipe is ready in 10 minutes.
6. Chunky monkey breakfast cookies
Cookies for breakfast? Why not, they are healthy and nutritious. And you can make them ahead of time! I often times make a large batch the day before and freeze them, so the only thing I have to do in the morning is heat them up in the oven and my (on-the-go) breakfast is ready. They make a great (post workout) snack as well!

Meal planning
All these breakfast recipes are quick and easy to make. That said, I almost always meal plan all my weekday meals and often times my breakfasts as well; in the weekend I come up with all the meals I want to make for the week. I make sure it isn’t too complicated; I prep what I can ahead of time, and most times I even make double portions (no harm in eating the same breakfast twice or three times in one week).
